A delectable aroma of sweet citrus and classic apple. Flavors range from tangerine to floral tartness with a gently tannic finish and slight bittersweet sparkle that leaves your palate clean and refreshed. This cider is a slowly fermented blend of classic russeted apples, grown in the Finnriver orchard and sourced around the region. The blend of high acid cider fruit with the gentle bittersweet tannin profile offers a thoughtful combination with layered complexity in the mouth. A lovely cider to balance spicy foods like jambalaya or Thai noodles.
A combination of chili heat and tart apple, mellowed by a dash of sweet, makes for a cider that is both fruity and spicy. A peppery tickle on the nose. We ferment to dry, then steep with organic Habanero chilies for several days until the ideal balance of heat and depth is achieved. Lightly carbonated. Enjoy in any latitude with good friends and serve with wordly foods like fish tacos, mole burritos, woodfired pizza. Add a splash of Tequila to a glass of Habanero for more heat, or use as a base in a Bloody Mary. Bold chefs could use this cider to glaze a steak or sautee shrimp.
A foundation of bright citrus in this cider is layered with a smooth whiskey depth and spicy rye spirit. A fine, craft cider that showcases American oak, Northwest rye whiskey, and Washington organic apples. Once fermentation is complete, this cider is then aged for 12 to 16 weeks in rye whiskey barrels. Woody astringency balances the acidity, and then finishes with lovely toasted oak and vanilla notes.
This cider pairs nicely with heartier foods like roasted chicken & veggies, stewed rabbit, smoked salmon, or bratwurst with kraut and stoneground mustard. The Oak & Apple was a 2017 Good Food Awards winner.
Bright apple fruit with the elegant sweetness and subtle delights of the pear. A tree-ripened, delicate and refreshing taste of the orchard. We ferment the apple juice, then sweeten with organic pear for additional depth, sweetness and flavor. Lightly carbonated. Enjoy as an apéritif before a meal, with your plate for graceful palate cleansing, or after dinner as a dessert cocktail. A wonderful cider for any occasion.
A smooth, fruitforward blend of pear and brandy that quickly surrounds your mouth in a warm pear embrace. Rich and sumptuous. Lightly fermented Pear Wine captures the ripe intensity of the fruit. Fermentation is halted by the addition of apple brandy, customdistilled for Finnriver by SkipRock and back sweetened to taste.
Lovely paired with dessert or as dessert itself. A surprising treat with salty cheeses, for contrast.
Ripe, red raspberry swirls into the brandy vapors and offers a clean delivery of the summer's fresh harvest. Flavor spreads across the palate. Raspberry wine is fermented from organic raspberry juice. Fermentation is halted by the addition of apple brandy, custom distilled by SkipRock Distillery.
Delightful drizzled on ice cream or baked into a sumptuous dessert.
This cider begins with aromas of unripened olives up front, offers slightly briny notes on the mid palate, and then finishes with gentle nuances of bitter oak and pine needles. Cloudy in the bottle and the keg, the Spanish generally take their cider un-carbonated and at room temperature; we bend a little and give this a gentle bubble while allowing the lees to persist and deepen the nutty bitterness. A Spanish style cider fermented with open head space in the tank allowing exposure to oxygen, which promotes the wild vinegar bacteria that provide the pungent acetic nose these ciders are famous for. This cider carries an acidity from tart culinary apples and a finishing astringency from a touch of oak. Fermented with oak and lightly sweetened with organic cane sugar.
Pairs well with grilled oysters, a variety of green olives, sharp, dry cheeses such as Manchego, Petite Basque or Mt Townsend Creamery’s Campfire.
Notes of caramel and oak, with woody roots, rich apple depth and warming brandy heat. This wine goes through all of the stages of apple metamorphosis: it begins as apple juice which we ferment into an apple wine. We then fortify this wine with our apple brandy. The finished wine ages with oak spirals or in a barrel. This is considered a ‘fortified wine’ and not a distilled spirit. Similar to the French method “vin doux natural,” whereby wines are fortified with a neutral spirit to stop the yeast before fermentation is complete and all sugars have been converted into alcohol. The wines thus retain some naturally occurring sugar, perceived as sweetness on the palate. Our brandy is custom-distilled by Skip Rock Distillers.
Enjoy with a plate of hard cheese and sliced apple or pear. Also lovely sipped with a sorbet to create a lively exchange of cool and heat.
Sweetness: Sweet but not wholly dessert. Retains some naturally occurring sugar.
Delicate and luscious with delightful pear bouquet and warming finish. We take pear juice which we ferment into a pear wine. We then fortify this wine with our apple brandy and if needed, back-sweeten with pear juice. The finished wine ages with oak spirals or in a barrel. This saison/farmhouse style cider was produced in collaboration with the Cider Summit to celebrate and accompany national Cider Summit events in 2017! Fermented with a Saison ale yeast for silky body and farmhouse finish. Nutty and apricot undertones accompany the tropical fruit notes and intertwine with a hint of clove and black pepper. Delicious served with spicy Asian or Middle-Eastern foods.
