Seasonal Botanical Ciders

Our botanical ciders share the earthly essence of life in the fields and forests of the Olympic Peninsula.  They feature local ingredients that are iconic or flourishing in our region and each seeks to capture the essence of the season.  All of our seasonal ciders are small batch production featuring cider fermented on the farm using 100% organic apple juice pressed from Washington apples.

Bright apple fruit with tart cranberry infusion, a rosy blush and herbal, bittersweet finish from the rosehips.  After fermentation, we add the juice of transitional organic cranberries from the Washington coast’s Starvation Alley farm, and an infusion of rose hips gathered the hedges across the Olympic Peninsula. Sweetened with unrefined organic cane sugar for added depth and balance. Lightly carbonated.

The Cranberry Rosehip makes a festive holiday cider! Enjoy with your Thanskgiving turkey or winter duck.

Bright apple fruit infused with the crisp, forest flavors of fir trees. Tangy, tree tones with warm spice from the ginger.  After fermentation, we steep with locally harvested Doug Fir and Grand Fir needles (our kids get paid $5 per bag to collect from the forest around the farm). We then infuse with organic ginger and sweeten with unrefined organic cane sugar for added depth and balance. Lightly carbonated.

Lovely paired with Fall foods; roasted roots, mushroom risotto and hearty stews. Enjoy with an Autumn sunset or a mountaintop vista.

This cider offers a light, bright taste of the flowering, green fields of spring. Honey from local hives offers a warm sweetness and depth. This floral, earthy nectar sips like a fine, fermented spring tea.  After fermentation, we sweeten the Honey Meadow with local organic honey and then infuse it with lemon balm collected from local meadows and a dash of chamomile. Lightly carbonated.

Pair this cider with coconut curry, lemon braised halibut, spring salads, goat cheese on toasted bread and other sassy spring dishes.

Bright apple fruit balanced by berry complexity and rich, floral depth of local, organic Royal Velvet lavender. After fermentation, we blend with black currant and then steep lavender flowers to desired intensity. A final addition of unrefined organic cane sugar adds depth, sweetness and flavor. Lightly carbonated.

Lovely paired with summer salads, fragrant cheeses and decadent desserts.

Locally grown saffron gives this cider its warm color and a gentle bittersweet earthiness, balanced with the rounded flavors of anise and fennel, finishing on a light lingering licorice note.  We crafted this cider around the time of the Winter Solstice, inspired by the local saffron grown at Phocas Farms in Port Angeles.  The bright cider features fermented organic apples delicately steeped with herbs in honor of the early spring and the returning light. Lightly carbonated.

Pair this cider with saffron inspired dishes or with a range of Mediterranean or Indian foods, also minty rice, sushi, summer salads with edible flowers or lightly braised vegetables.
