Traditional Ciders

These ciders feature apples only. They are unique interpretations of world cider traditions that show our respect for cider heritage and also a lively spirit of innovation in the Finnriver cider barn.  they highlight the versatility of cider styles and celebrate the variety of flavor profiles of different apple blends and production methods.  These bottles are for the folks who want 'all apple' ciders and who are curious about different styles of cider.

A yeast adventure results in this silky, full-bodied cider. Lingering sweetness from the apples brings out tropical aromas of ripe banana, with hints of pepper and clove spice. A low acidity allows the lees to wander and create a gentle cloud. Nutty and bread-like finish.  We ferment this cider in two batches, with two strains of Belgian-style abbey yeast, at high temperatures. Combined, these ferments present the archetypal Belgian beer nose of tropical fruit with hints of spice and pepper. We use a subtle infusion of oak to fill in the body and then sweeten with organic cane sugar.  

Pair with a burger piled high with carmelized onions and a side of sweet potato fries, or with goat cheese salad and candied pecans.

An earthy, amber-colored cider with an aroma of warm bread and sweet apple. Offers a rustic taste of the ripe orchard and hearty homestead cider tradition. Nutty with a sharp acidity that balances a gentle tannic finish. Unfiltered lees lend body to this cider.  Inspired by World Apple Day in October, we invite friends and neighbors to bring their bruised, bitter and bizarre apples to the farm to add to the bins. We then press and ferment this medley of fruit, and slightly sweeten to balance acidity and tannins. We conduct three different ferments with three different yeast strains to harvest subtleties from each and combine together for a cloudy yet clean farmhouse cider. Sweetened with organic cane sugar. This cider is lightly filtered to maintain rustic character and earthy finish. Lightly carbonated. A portion of proceeds is donated back to local charities.  

Farmstead cider pairs well with heartier foods such as wood fired pizza, polenta, sausage, burgers and corn on the cob.

A foundation of bright citrus in this cider is layered with a smooth whiskey depth and spicy rye spirit.  A fine, craft cider that showcases American oak, Northwest rye whiskey, and Washington organic apples. Once fermentation is complete, this cider is then aged for 12 to 16 weeks in rye whiskey barrels.  Woody astringency balances the acidity, and then finishes with lovely toasted oak and vanilla notes.   

This cider pairs nicely with heartier foods like roasted chicken & veggies, stewed rabbit, smoked salmon, or bratwurst with kraut and stoneground mustard.  The Oak & Apple was a 2017 Good Food Awards winner.

This cider begins with aromas of unripened olives up front, offers slightly briny notes on the mid palate, and then finishes with gentle nuances of bitter oak and pine needles. Cloudy in the bottle and the keg, the Spanish generally take their cider un-carbonated and at room temperature; we bend a little and give this a gentle bubble while allowing the lees to persist and deepen the nutty bitterness.   A Spanish style cider fermented with open head space in the tank allowing exposure to oxygen, which promotes the wild vinegar bacteria that provide the pungent acetic nose these ciders are famous for. This cider carries an acidity from tart culinary apples and a finishing astringency from a touch of oak. Fermented with oak and lightly sweetened with organic cane sugar.

Pairs well with grilled oysters, a variety of green olives, sharp, dry cheeses such as Manchego, Petite Basque or Mt Townsend Creamery’s Campfire.
